A neat quality of life feature to have would be the ability to bind everything to two keys at once.
For example looking back with both q and lmouse or movement with both wasd and arrow keys could be convenient.

Grand Theft Auto had nice system where you could bind multiple keys for multiple devices from same menu. Though joystick axis were still hardcoded.
Keybindings could see improvement. There is misconception with current gamepad config that you would accelerate with joystick up, and if you use L2/R2 shoulders those will be used as well for menus.
Other good example is Burnout Paradise where in addition to good defaults you can rebind every key for menus and gameplay actions separately. Each device has separate configuration and UI changes notation depending on what device is used at the moment.

I would like to be able to switch around the keybinds of different players. But that's not relevant to this topic.

I agree of that idea, the feature could be used for example to bind alternative buttons for controlling the car (gas, brake+reverse, left and right) (under the left hand) without disabling the ability to control the car with arrow keys (right hand), it would be very useful in situations where the arrow buttons are too small or do not work properly.
